The Baby is One!

The Baby is One!

The baby had a birthday! She is one! It is more an accomplishment for me, than her. I want to say the year went so fast, that is what everybody says. But it didn’t! A year… seemed about a year long. This kid has been so much work compared to my first two unicorn children. She still is a lot of work, though it seems like she is finally starting to come around. Some nights she sleeps through the night, she is napping better, and laughing more. She is starting to play with her sisters, which keeps her busy and distracted, which means less hanging on me. We have made it a year of waking up 2+ times a night, of nursing (she stopped a month ago), of wanting to be held, bounced, and rocked constantly. You are supposed to feel like you could hold your sweet, delicious smelling baby, forever. I can’t do that, I don’t want to hold you forever, no matter how fast you grow. This one, wanted to be held constantly. Stop touching me! So, me. Happy Birthday to me! I made it a year!

Anyway, for my delicious baby, I made some delicious cupcakes.

I hate working with pastry bags, so I cut the corner off of a ziplock and put a frosting tip in the bag. Worked great!

The next dessert in The Beekman 1802 Heirloom Dessert Cookbook was Chocolate Rocky Road Potstickers.

They were surprisingly easy to make, delicious, and look super fancy. At least, I think they look super fancy.

But first lets look at this delicious chocolate…

And now the potstickers…

They were so yummy! A great light dessert.

Have a fantastic week!
