It’s Hamantaschen Time!

Purim is coming up, time to make these delicious triangle shaped cookies.

My hat it has three corners, three corners has my hat, and had it not three corners, it would not be my hat!

Hamantaschen are shaped like the antagonist’s hat in the story of Purim, evil Haman! Boo!!! But his hat cookies are so yummy :/ Fill them with anything you like. I prefer Nutella or Cherry preserves, but really you can fill them with anything! Or go classic poppy seed if you are a traditionalist.

Dough Preparation
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. Beat butter until smooth, add sugar and beat until fluffy, add eggs and beat until completely mixed in.
  3. Mix in the juice and vanilla.
  4. Gradually mix in the flour mixture. Dough is a good consistency if it is not sticking to the sides. Do a quick knead on a floured surface until smooth and then place it in a covered bowl in the fridge for TWO HOURS.
